Pork Ribs Binagoongan with Talong

Ingredients

  • 2 lbs. pork spareribs
  • 1 piece Knorr Pork Cube
  • 3 ½ tablespoons bagoong alamang
  • 3 cloves garlic chopped
  • 1 piece onion chopped
  • 1 piece tomato diced
  • 2 tablespoons white vinegar
  • 1 piece Chinese eggplant sliced into serving pieces
  • 2 cups water
  • 1 teaspoon granulated white sugar
  • ¼ teaspoon ground black pepper
  • ¼ cup green onion chopped
  • 5 tablespoons cooking oil

Instructions

  1. Heat 3 tablespoons of cooking oil in a pan. Fry eggplants for 3 minutes or until its texture softens. Remove from the pan. Set aside. Note: Make sure to flip it every minute to cook all sides evenly.
  2. Add remaining oil. Sauté onion, garlic, and tomato until the onion softens.
  3. Add pork ribs. Continue cooking until the color of the ribs turn light brown.
  4. Add bagoong alamang. Cook for 3 minutes while stirring.
  5. Pour-in vinegar. Let boil. Stir and add water. Let it boil.
  6. Add Knorr Pork Cube. Cover the pan and adjust heat to the lowest setting. Cook until the meat gets tender. Note: Add more water if needed.
  7. Season with sugar and ground black pepper.
  8. Add fried eggplants. Cook for 1 ½ minutes.
  9. Finish by adding chopped green onions.
  10. Serve with warm rice! Share and enjoy.
