Potato Fritter Sliders - Air Fryer

Potato Fritter Sliders made in an air fryer feature spiced potato balls coated in a gram flour and cayenne batter, fried to a crispy exterior. The potato filling uses boiled potatoes seasoned with mustard seeds, curry leaves, turmeric, garlic, ginger, chili, and lemon juice, adding a fragrant and mildly spicy flavor. Served on buttered dinner rolls with chutneys, these sliders offer a blend of crispy and soft textures and a combination of tangy, spicy, and savory notes.

Ingredients

For Potato Stuffing
  • 3 potato boiled and peeled
  • 1 tablespoon neutral cooking oil generic cooking oil
  • 8 curry leaves aka Kadi Patta
  • 1/2 teaspoon mustard seeds aka rai
  • 1/8 teaspoon asafoetida optional, aka hing
  • 1 green chili pepper minced (optional)
  • 4 cloves garlic minced
  • 1 inch ginger minced
  • 1/2 teaspoon turmeric powder ground, aka Haldi powder
  • 1/2 teaspoon salt
  • 2 tablespoon cilantro finely chopped
  • 1-2 tablespoon lemon juice
For Batter
  • 3/4 cup gram flour aka besan
  • 1/2 teaspoon cayenne pepper or red chili powder
  • 1/2 teaspoon salt
  • 1/3 cup water
  • 1/2 tablespoon neutral cooking oil generic cooking oil
Other Ingredients
  • 8 dinner rolls Pav
  • 2 tablespoon ghee or butter
  • 2 tablespoon chili garlic chutney dry
  • mint chutney contains cilantro
  • tamarind chutney

Instructions

Preparing batter
    Cup of Yum
  1. Mix all batter ingredients together to form a thick smooth paste. Let this batter rest until you prepare the stuffing.
Preparing stuffing
  1. Mash the boiled peeled potatoes using your hand or a potato masher. You want them broken down, but not mushy.
  2. In a pan on stovetop (or in the instant pot on saute mode), heat oil. Add the mustard seeds, curry leaves. Let the mustard seeds pop.
  3. Add asafoetida, minced green chili, ginger, garlic and saute for 30 seconds until the raw smell is gone.
  4. Add salt, turmeric, cilantro and then quickly add the potatoes. Mix well.
  5. Add lemon juice and mix well with the potatoes. Take the potato stuffing off heat and let it cool.
  6. Preparing Potato Fritters
  7. Make small to medium sized balls with the potato stuffing using your hand.
  8. Brush oil on the air fryer grill pan.
  9. Mix the batter you prepared so it is smooth. Dip the potato balls in the batter, coat evenly and place them on the air fryer grill pan. Depending on the space you have add 4 or more at once, keeping space between them.
  10. Set at 390°F in Air fryer for 14 minutes. Check half way through.
  11. Carefully remove the fritters from the grill pan.
Preparing the Sliders
  1. While the fritters are being prepared, slice the dinner rolls into 2 pieces. 
  2. Heat butter on a pan over medium heat and place the sliced dinner rolls on it. Lightly toast on one side and then turn to toast on the other side. (this step is optional)
  3. Apply tamarind and green chutney on both sides of the dinner rolls. Sprinkle some dry chili garlic chutney. Place the fritters in between the dinner rolls and press gently. Gently press a little and serve immediately.

Notes

  • You may fry the spiced potato balls on the stovetop in hot oil instead of using an air fryer.
  • Chutney options can vary; tried and tested choices include Indian mint, tamarind, chili garlic, as well as nontraditional spreads like chipotle mayo or pesto mayo.
  • For added texture or flavor, add slices of onion, tomato, lettuce, or cheese to the sliders before serving.
