Ingredients

  • 6 6 baked potatoes
  • olive oil
  • salt and pepper to taste
  • 12 12 ounces cheddar cheese shredded (or favorite cheese blend)
  • 6 6 slices cooked bacon crumbled
Other Toppings:
  • sour cream
  • chives
  • guacamole
  • Pico de Gallo
  • salsa

Instructions

    Cup of Yum
  1. Preheat oven to 400º F.
  2. Split baked potatoes in half and scoop out center of potato.
  3. Drizzle olive oil over the baked potato half and place on baking sheet, skin side up. Sprinkle with salt and pepper.
  4. Place in oven for approximately 5 minutes, remove from oven and flip, sprinkle with additional salt and pepper. Broil for another 5 minutes.
  5. Remove from oven and fill hollowed interior with shredded cheese and top with bacon crumbles.
  6. Return to oven for approximately 5 minutes or until cheese has melted and is bubbly. Serve warm with your favorite toppings.
