Poutine with Waffle Fries

Ingredients
Waffle Fries
- 1 pound Waffle Fries of choice, frozen
Gravy
- 3 tbsp butter unsalted
- 1 clove garlic
- 3 tbsp all-purpose flour
- 12 oz beef broth high quality
- salt to taste
- black pepper to taste
poutine
- 4 oz cheese curds white
- 2 tbsp chives thinly sliced
Instructions
- Preheat oven to 425˚F.
Waffle Fries
- Spread frozen waffle fries onto a baking sheet in a single layer and bake in oven until crisp, 20 to 25 minutes. Set aside.
Gravy
- Place a saucepan over medium heat and melt butter. Once butter has melted add garlic and saute for 2 to 3 minutes. Sprinkle flour over mixture and whisk together until no dry spots remain and the raw flour taste is gone, about 2 minutes. In a slow and steady stream whisk broth into flour mixture, while whisking. Continue to whisk together until no lumps remain. Season with salt and pepper. Continue to stir gravy until thickened enough to coat the back of a spoon, about 5 minutes.
Poutine
- Transfer waffle fries to an ovenproof serving platter. Top fries with cheese curds and place back into the oven until curds just begin to melt, 3 to 4 minutes. Remove fries from oven and drizzle with gravy. Top poutine with sliced chives and serve.
