Ingredients

Praline Pecans
  • 1/2 cup brown sugar , packed
  • 1 cup pecans , chopped
Banana Muffin Batter
  • 2 large eggs
  • 1 cup mashed ripe bananas , (1 to 2 medium)
  • 1/2 cup vegetable oil
  • 1/3 cup brown sugar , packed
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 375 degrees and line a 12 cup muffin tin with muffin liners.
  2. Add brown sugar and pecans to a large non-stick skillet on medium heat.
  3. Stir and cook until the pecans are sticky and the liquid has evaporated about 6-8 minutes.
  4. Remove to a baking sheet lined with parchment paper and let cool.
  5. Roughly chop the pecans if they are stuck together.
  6. In a large bowl whisk together eggs, banana, oil, and brown sugar.
  7. Sift together flour, baking soda, cinnamon, nutmeg, and salt.
  8. Whisk the dry ingredients into the wet ingredients until just combined.
  9. Stir in the candied pecans (reserve some to sprinkle on top of muffin batter).
  10. Scoop batter into muffin liners and top with remaining pecans.
  11. Bake for 18-20 minutes or until a toothpick comes out clean.
