Prawn Stir Fry with Noodles

Ingredients
- 1 cup prawns (shrimp)
- ½ noodles 2 nests, packet
- 4 garlic cloves
- 2 spring onions
- ½ tablespoon ginger grated
- 1 tablespoon vegetable oil
- 1 tablespoon sesame oil
- 2 tablespoon soy sauce light
- 2 tablespoon dark soy sauce
- 1 teaspoon rice vinegar
- 1 tablespoon fish sauce
- parsley for garnish
- 1 carrot
- 1 cup mangetout snow pea
- sugar a pinch
Instructions
- Cook the noodles according to the packet instructions.
- Drain the water, rinse, and add a tablespoon of sesame oil. Toss well.
- Heat a tablespoon of vegetable oil in a wok or a large pan until smoking hot.
- Peel and chop the garlic, and add it to the pan together with the spring onions and ginger. Stir fry for 30 seconds until fragrant.
- Add the prawns, and stir fry for 1-2 minute until the prawns change their colour.
- Remove from the pan and set aside.
- Add the shredded carrot and mangetout, and stir fry for 2-3 minutes until it softens a bit.
- Stir well and add the prawns together with the soy sauces, fish sauce and rice vinegar and sugar.
- Toss in the noodles, and leave to cook for a further 1-2 minutes until everything is well combined.
- Serve hot!
