Prawn Stir Fry with Noodles

Ingredients

  • 1 cup prawns (shrimp)
  • ½ noodles 2 nests, packet
  • 4 garlic cloves
  • 2 spring onions
  • ½ tablespoon ginger grated
  • 1 tablespoon vegetable oil
  • 1 tablespoon sesame oil
  • 2 tablespoon soy sauce light
  • 2 tablespoon dark soy sauce
  • 1 teaspoon rice vinegar
  • 1 tablespoon fish sauce
  • parsley for garnish
  • 1 carrot
  • 1 cup mangetout snow pea
  • sugar a pinch

Instructions

  1. Cook the noodles according to the packet instructions. 
  2. Drain the water, rinse, and add a tablespoon of sesame oil. Toss well.
  3. Heat a tablespoon of vegetable oil in a wok or a large pan until smoking hot.
  4. Peel and chop the garlic, and add it to the pan together with the spring onions and ginger. Stir fry for 30 seconds until fragrant.
  5. Add the prawns, and stir fry for 1-2 minute until the prawns change their colour.
  6. Remove from the pan and set aside.
  7. Add the shredded carrot and mangetout, and stir fry for 2-3 minutes until it softens a bit.
  8. Stir well and add the prawns together with the soy sauces, fish sauce and rice vinegar and sugar.
  9. Toss in the noodles, and leave to cook for a further 1-2 minutes until everything is well combined.
  10. Serve hot!
