Preserved Lemon and Mint Whipped Feta Dip

This preserved lemon and mint whipped feta dip is so easy to make you'll be making it all summer long. Ready in just 10 minutes and can be scooped up with crackers, vegetables, or by the spoonful!

Ingredients

  • 10 ounces fresh Feta cheese
  • 1 lemon zested
  • 1 lemon juiced
  • 1 clove garlic minced
  • 1/3 cup extra virgin olive oil
  • 1/4 cup chopped preserved lemon
  • 2 tablespoons fresh mint roughly chopped
  • 1/2 teaspoon crushed red pepper more if desired
  • Fresh cracked pepper

Instructions

  1. In a large food processor add all ingredients and puree until smooth.
  2. Pour into a serving bowl.
  3. If desired, top with the addition of chopped preserved lemon, mint, crushed red pepper, and fresh cracked pepper.
  4. Serve with crackers or fresh vegetables.
