Proja

The proja is a traditional flatbread from the Balkan region that is made from cornmeal. It is called proha in Bosnia and Herzegovina.

Ingredients

  • 1½ cup cornmeal
  • 1 cup all-purpose flour
  • 1 cup sparkling water
  • 1 cup vegetable oil
  • 2 eggs beaten
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • butter or margarine, for the mold

Instructions

  1. Preheat the oven to 480 F (250 C).
  2. In the bowl of a stand mixer, mix all the ingredients with the flat beater and knead until obtaining a semi-liquid, homogeneous, lump-free dough.
  3. Pour the mixture into a 10-inch (24 cm) square baking dish previously greased with butter or margarine.
  4. Bake for 20 minutes at 480 F (250 C). Then, lower the oven temperature to 300 F (150 C), and bake for 10 additional minutes.
  5. After 30 minutes of baking, insert a toothpick into the proja. If it is dry, it is fully baked. If not, continue baking for 5 minutes.
  6. Cut the proja into 3-inch (8 cm) squares to serve.

Notes

  • You can optionally add crumbled feta cheese to the dough.
