  • 500 gms – 1 lb. chicken mince
  • 4 tbsp parmigiano reggiano finely grated
  • 1 egg
  • 1 pinch nutmeg
  • ¾ cup breadcrumbs
  • salt to taste
  • 200 gms – 7 oz. fresh mozzarella/fior di latte sliced
  • 6 sun-dried tomatoes chopped
  • 50 gms – 1 ¾ oz. Prosciutto
  • 1 onion
  • 60 ml – ¼ cup white wine
  • 80 ml 1/3 cup chicken stock plus more if needed
  • 2 tbsp extra virgin olive oil
  • 2 tbsp vegetable oil
