Prosciutto Wrapped Asparagus

Ingredients

  • 10 talks asparagus tough ends trimmed (about 1/2 pound)
  • 4 ounces prosciutto
  • 2 ounces Parmesan Cheese shaved
  • 3 Tablespoons olive oil
  • Kosher salt and cracked pepper.

Instructions

  1. Preheat broiler to high. Brush each spear of asparagus with olive oil.
  2. Grill asparagus for just a few minutes, the idea is to cook, but not brown the spears.
  3. Remove from the oven and allow to cool until room temperature.
  4. Wrap each spear with a thin slice of prosciutto
  5. Sprinkle with shaved cheese. Drizzle with olive oil.
  6. Season with a sprinkling of kosher salt and cracked pepper.
