Protein Donuts

Protein Donuts blend almond flour, vanilla protein powder, and baking powder with moisture from eggs, maple syrup, coconut oil, and almond milk to create baked donuts with a light, moist texture. A cocoa powder glaze topped with sprinkles adds a sweet finishing touch. These donuts are baked in molds for even shape and gently spring back when done. Ingredients

Donuts
  • 1 ½ cup almond flour about 212 grams
  • ½ cup protein powder vanilla
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt sea salt
  • ½ cup maple syrup at room temperature
  • 2 large egg at room temperature
  • ¼ cup coconut oil melted
  • ¼ cup almond milk at room temperature, unsweetened
  • 2 teaspoons vanilla extract
Chocolate Glaze
  • 1 cup powdered sugar
  • 2 Tablespoons cocoa powder
  • 2 Tablespoons almond milk unsweetened
  • Rainbow sprinkles for topping

Instructions

  1. Preheat oven to 350°F.
  2. In a medium bowl, add the flour, protein, baking powder and salt and stir until combined.
  3. Add maple syrup, eggs, coconut oil, almond milk and vanilla extract to the same bowl and mix until just combined.
  4. Spray two (6-cavity) donut pans with cooking spray. Spoon or pipe batter evenly into the 12 cavities.
  5. Bake for 10 minutes, or until donuts spring back when lightly pressed. Cool in pan for 2 minutes. Invert donuts onto a wire rack.
  6. While donuts are cooling, make icing by combining powdered sugar, cocoa powder and almond milk in a small mixing bowl.
  7. Once donuts have cooled completely, frost donuts and decorate with sprinkles (if using) and then place them on a wire rack for the glaze to firm up.

Notes

  • Store donuts at room temperature for 2-3 days to maintain texture.
  • For longer storage, refrigerate in an airtight container for 4-5 days or freeze up to 3 months.
  • Allow glaze to firm after frosting before storing to avoid stickiness.
