Protein Granola

This granola is so much more delicious than the store-bought stuff. Filling, easily customizable, nutritious, high-protein, and gluten-free!

Ingredients

  • 2 cups rolled oats old-fashioned
  • 1/2 cup protein powder packed, vanilla
  • 1 tablespoon cinnamon powder
  • 1/2 teaspoon salt
  • 1/2 cup pumpkin seeds aka pepitas
  • 1/2 cup almonds slivered
  • 2 tablespoons flax meal
  • 2 tablespoons chia seeds
  • 1/4 cup coconut oil
  • 2 tablespoons peanut butter natural
  • 1/2 cup maple syrup

Instructions

  1. Heat your oven to 300°F and line a large, rimmed baking sheet with parchment paper.
  2. In a large bowl, stir together the oats, protein powder, cinnamon, and salt.
  3. Add in the flax, chia seeds, pepitas, and almonds, and stir until well combined.
  4. In a microwave-safe bowl, melt the coconut oil, peanut butter, and maple syrup and stir to combine.
  5. Stir into the dry ingredients until well combined.
  6. Spread onto the baking sheet and bake for 15 minutes.
  7. Stir and then bake for another 10 to 15 minutes or until golden brown.
  8. If you want chunky granola, press it together a little bit on the pan.
  9. Let it cool completely on the pan before breaking the granola into pieces.
