Protein-Packed Chicken Avocado Rice Bowl

This quick and easy chicken avocado rice bowl is protein packed and loaded with juicy chicken, creamy avocado and a whole grain rice blend. Ideal for for meal prep or a quick, healthy dinner!

Ingredients

  • 2 teaspoons olive oil
  • 16 ounces pre-cooked chicken (Hungryroot or similar)
  • 2 cups lentil quinoa rice mix (Hungryroot or similar)
  • 1 cup black bean corn salad (Hungryroot or similar)
  • ½ cup avocado (mashed from Hungryroot or similar)

Instructions

  1. Heat oil in a skillet over medium-high heat. Add chicken to pan and saute until warmed through, about 3-4 minutes.
  2. Cook rice according to package instructions then divide between 4 bowls. Top each with equal parts chicken, black bean corn salsa and mashed avocado. Enjoy!
