Ingredients

  • 1 1/2 cups flour *all purpose
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 teaspoon cinnamon
  • 3/4 cup sugar
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 3/4 cup pumpkin puree
  • 1 cup bananas *mashed, about 2 medium
  • 2 cups chocolate chips *optional

Instructions

  1. Preheat oven to 350 degrees F and line a muffin pan with liners or grease.
  2. In a medium mixing bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and sugar.
  3. Add in the vegetable oil, vanilla, eggs, pumpkin, and banana stirring until just combined.
  4. Fold in about 1 1/2 cups chocolate chips.
  5. Fill each greased muffin cup about 3/4 full.
  6. Sprinkle remaining chocolate chips on top of each muffin cup and place tray into preheated oven.
  7. Bake for about 25-30 minutes, or until toothpick comes out clean when inserted in center of muffin.
  8. Remove from oven and allow to cool for about 10 minutes before enjoying!
