Pumpkin Bars with Cream Cheese Frosting

Ingredients

  • 4 eggs
  • 1 ⅔ cup sugar
  • 1 cup canola oil
  • 15 ounces pumpkin puree
  • 2 cups flour
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoon cinnamon
  • 1 teaspoon salt
Frosting
  • 3 ounces cream cheese softened
  • ½ cup butter
  • 1 teaspoon vanilla
  • 2 cups powdered sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Grease a 10x15 inch baking pan and set aside.
  2. In a large mixing bowl beat together eggs, sugar, oil and pumpkin until light and fluffy. Mix in dry ingredients until combined. Spread into prepared baking pan.
  3. Bake for 20-25 minutes or until they test done. Cool.
  4. For the frosting cream together cream cheese, butter and vanilla until smooth in mixing bowl. Gradually add in powdered sugar and cinnamon while mixing. Spread over cooled bars.
  5. Store in airtight container in the refrigerator.

Notes

  • If you don’t plan on serving them right away, I recommend storing the frosted bars in the refrigerator. This will keep the frosting stable.
  • Or, you can bake the bars a day in advance and tightly wrap them in plastic to keep at room temperature. The next day, you can make the frosting and frost them before serving.
  • Store any leftover bars in an airtight container in the refrigerator.
