Pumpkin Blondies

Ingredients

Batter
  • ½ cup salted butter melted
  • 1 ½ cups light brown sugar packed
  • 1 cup pure pumpkin puree
  • 2 eggs room temperature
  • 2 tsp vanilla extract
  • 2 cups all purpose flour
  • 2 tsp pumpkin pie spice
Swirl Topping
  • 2 tbsp salted butter softened
  • ¼ cup light brown sugar
  • 1 tsp pumpkin pie spice

Instructions

  1. Preheat oven to 350F and line an 8x8 baking pan with parchment paper.
  2. To make batter, whisk melted butter, brown sugar, pumpkin puree, eggs and vanilla extract together in a large mixing bowl. In a separate bowl combine flour and pumpkin pie spice. Fold dry ingredients into wet with a flat spatula.
  3. Pour batter into the prepared pan and spread into an even layer.
  4. Mix swirl ingredients with a fork until evenly combined - this mixture should be slightly crumbly.
  5. Pour over the top of the batter and swirl the crumble into batter with a toothpick or clean knife.
  6. Place in the oven and bake for 40 minutes. Allow to cool completely before cutting into squares.
