Pumpkin Bread with Chai Streusel

Our favorite pumpkin bread! It's tender and perfect with a crunchy chai spiced streusel on top. A cross between quick bread and cake, it's the best treat for fall. Have it for breakfast or dessert!

Ingredients

  • 4 tablespoons ground cinnamon
  • 2 tablespoons ground cardamom
  • 1 ½ tablespoons ground ginger
  • 2 teaspoons ground nutmeg
  • 1 teaspoon ground allspice
  • ½ teaspoon ground cloves

  • 1 ½ cups all-purpose flour
  • 2 tablespoons chai spice
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup sugar
  • 1 cup pumpkin puree
  • ½ cup plain greek yogurt
  • ¼ cup Avocado or Vegetable Oil
  • 3 teaspoons vanilla extract

  • ⅔ cups brown sugar
  • ⅓ all-purpose cup flour
  • 1 ½ tablespoons chai spice
  • 4 tablespoons unsalted butter

  1. Whisk all the spices together until combined. Store in a sealed container for 3 to 6 months.

  1. Preheat the oven to 350 degrees F. Spray a 8x4 inch loaf pan with nonstick baking spray.
  2. In a small bowl, whisk together the flour, chai spice, baking powder, soda and salt.
  3. In a large bowl, whisk together the eggs and sugar. Whisk in the pumpkin and yogurt. Whisk in the oil and vanilla extract.
  4. Stir in the dry ingredients until just combined and smooth. Pour the mixture into the prepared loaf pan.
  5. To make the streusel, stir together the sugar, flour and chai spice. Add the butter and mix with a fork, eventually mixing with your hands so the butter is fully incorporated and the mixture is moistened. Evenly sprinkle it over the pumpkin bread.
  6. Bake the bread for 50 to 55 minutes, or until a tester inserted into the center comes out clean.
  7. Remove and let cool completely before slicing. Enjoy!
