Ingredients
- 1 pound cake mix 16 ounce package
- 3 egg 1 for crust and 2 for filling
- 2 tablespoons butter melted
- 4 teaspoons pumpkin pie spice divided
- 1 cream cheese 8 ounce package; softened
- 1 sweetened condensed milk 14 ounce can
- 1 pumpkin puree 15 ounce can
- 1/2 teaspoon salt
- 1 cup nuts optional. I use walnuts, chopped
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, whisk together cake mix and 2 teaspoons pumpkin pie spice. Using a mixer on low speed, add 1 egg and butter . Mix until crumbly. Press mixture onto the bottom of a 10" x 15" jelly roll pan.
- In a large mixing bowl, beat cream cheese until fluffy. Gradually beat in sweetened condensed milk, then remaining 2 eggs, pumpkin, 2 teaspoons pumpkin pie spice and salt; mix well. Pour over crust; sprinkle with nuts. Bake 30-25 minutes or until set. Cool and chill, then cut into bars. Store covered in refrigerator.

Notes
- I use different size pans for this recipe. Sometimes I want the crust to be thicker, so I use a 9 x 13 pan and increasing the cooking time up to 15 minutes.
