Ingredients

  • 1 pound ground beef
  • 2 talks celery , finely chopped
  • 1 medium onion , finely chopped
  • 1 red bell pepper , finely chopped
  • 2 garlic minced, cloves
  • 29 ounces tomato sauce
  • 15 ounces crushed tomatoes
  • 15 ounces pumpkin puree
  • 1 tablespoon sugar
  • 1 tablespoon chili powder
  • 1-1/2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 15 ounces black beans , rinsed and drained

Instructions

  1. In a Dutch oven, cook the first five ingredients over medium heat 8-10 minutes or until beef is no longer pink and vegetables are tender, breaking up beef into crumbles; drain.
  2. Stir in tomato sauce, tomatoes, pumpkin, 1 tablespoon sugar, chili powder, pie spice, 1/2 teaspoon salt and pepper; bring to a boil. Reduce heat; simmer, uncovered, 45 minutes, stirring occasionally.
