Pumpkin Chocolate Chip Cookies

Delicious milk chocolate chip cookies full of pumpkin flavor!

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons pumpkin pie spice
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup vegetable oil
  • 1 large egg
  • 1 cup canned pumpkin puree
  • 1 ½ teaspoons vanilla extract
  • 1 bag (11.5 ounces) milk chocolate chips (I use the Guittard baking chips)

  1. Preheat oven to 350 degrees F. Line 2 large cookie sheets with parchment paper. Set aside.
  2. In a large bowl, add the flour, pumpkin pie spice, cinnamon, baking powder, baking soda, and salt. Whisk until sifted and combined. Set aside.
  3. In a separate large bowl, add the granulated sugar, brown sugar, and vegetable oil. Beat with an electric hand-mixer until combined.
  4. Beat in the egg, pumpkin puree and vanilla. Mix until just combined. Gradually mix in the flour mixture; just until combined. Try not to over-mix. Fold in milk chocolate chips.
  5. Drop 2 Tablespoons of dough per cookie onto the prepared cookie sheets; spacing 2 inches apart. (15 cookies per sheet.) Bake for 12 minutes. Carefully remove from oven and let cookies cool right on cookie sheets.
