Ingredients
- ¾ cup unsalted butter room temperature (1½ sticks)
- ½ cup granulated sugar
- ½ cup brown sugar
- ⅓ cup pumpkin puree
- 1 large egg room temperature
- 1 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- 2 teaspoons pumpkin pie spice
- ½ teaspoon kosher salt
- 1 cup semisweet chocolate chips
Instructions
- Preheat the oven to 350°F.
- Cream the butter and sugars in a large bowl.
- Beat in the pumpkin puree, egg, and vanilla extract.
- In a separate bowl, whisk the flour, baking powder, baking soda, pumpkin pie spice, and salt together.
- Add the dry ingredients to the wet ingredients, and stir until just combined.
- Fold in the chocolate chips.
- Drop about 2 tablespoons of cookie dough onto the baking sheet and repeat for all the dough.
- Bake the cookies for 9-11 minutes. Let the cookies cool.
