Ingredients

Pumpkin Cupcakes:
  • 3/4 cup pumpkin puree
  • 2 large egg
  • 1/3 cup vegetable oil
  • 1 cups sugar
  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon pumpkin pie spice
  • 1/4 teaspoon salt
Cream Cheese Frosting:
  • 8 ounces cream cheese , softened
  • 1/4 cup butter softened, unsalted
  • 2 tablespoons sour cream
  • 1 tablespoon vanilla extract
  • 4 cups powdered sugar

Instructions

  1. Preheat the oven to 350 degrees.
  2. Line the 12 cup muffin tin with muffin liners.
  3. In a large bowl add the pumpkin puree, eggs, oil, and sugar, and whisk until fully combined.
  4. Into your bowl sift the flour, baking powder, baking soda, pumpkin spice, and salt, and whisk until just combined.
  5. Using a 1/4 cup ice cream scoop, scoop the batter into each liner.
  6. Bake for 22-25 minutes or until a toothpick comes out clean.
  7. Cool completely.
Cream Cheese Frosting:
  1. Add the cream cheese, butter, sour cream, and vanilla to a stand mixer and beat until light and fluffy, about 1 minute.
  2. Add in the powdered sugar one cup at a time on the lowest speed setting until smooth and fluffy, about 2 minutes.
  3. Add frosting to a piping bag and frost your cooled cupcakes.
