Ingredients
For the Donuts:
- 1 1/4 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 pinch salt
- 1 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cardamom optional
- 1/4 teaspoon ground cloves optional
- 1/2 cup sugar
- 1 cup canned pumpkin unsweetened
- 1/2 cup Greek yogurt low fat or fat free is ok
- 1/4 cup melted butter
- 1 egg
For the Cinnamon Sugar:
- 1 cup sugar
- 2 tablespoons cinnamon
- 1/4 cup melted butter
Notes
- You can use fresh pureed pumpkin, or store bought canned pumpkin however the fresh won't make much of a difference!
- use an ice cream scoop for perfectly even portions of batter when dividing the batter between the muffin pan.
- Be sure to let the donuts cool before coating them.
- Make sure to toss the donuts in melted butter evenly before adding them to the cinnamon sugar plate.
- Keep them well covered on the counter.
- The donuts stay fresh and moist for 4 days!
