Ingredients

  • 3/4 cup flour
  • 2 tablespoons brown sugar , packed
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon grated nutmeg
  • 1/4 teaspoon ground ginger
  • 1 pinch salt
  • 4 large eggs
  • 3/4 cup whole milk
  • 1/4 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 4 tablespoons unsalted butter
To Finish:
  • 1/4 cup powdered sugar
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 400 degrees.
  2. To a large mixing bowl add the flour, brown sugar, cinnamon, nutmeg and ginger whisking well to combine.
  3. Add in the milk, pumpkin puree, eggs and vanilla extract, whisking until just combined.
  4. Add the butter to a 10 inch cast iron skillet on medium high heat and brush the butter all over the inside of the skillet and up the sides.
  5. Pour the batter into the skillet and put it into the oven.
  6. Bake for 25-30 minutes until golden brown.
  7. Mix the powdered sugar and cinnamon and dust is over the finished pancake.
  8. Serve with maple syrup.
