Ingredients

Pumpkin Cupcakes:
  • 3/4 cup pumpkin puree
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 cups sugar
  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/3 cup crystallized ginger , finely chopped
Ginger Cream Cheese Frosting:
  • 8 ounces cream cheese , softened
  • 1/4 cup unsalted butter , softened
  • 2 tablespoons sour cream
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon ground ginger
  • 4 cups powdered sugar

Instructions

  1. Preheat the oven to 350 degrees.
  2. Line the 12 cup muffin tin with muffin liners.
  3. In a large bowl add the pumpkin puree, eggs, oil, and sugar, and whisk until fully combined.
  4. Into your bowl sift the flour, baking powder, baking soda, cinnamon, nutmeg, allspice, cloves, and salt, and whisk until just combined.
  5. Stir in crystallized ginger
  6. Using a 1/4 cup ice cream scoop, scoop the batter into each liner.
  7. Bake for 22-25 minutes or until a toothpick comes out clean.
Cream Cheese Frosting:
  1. Add the cream cheese, butter, sour cream, vanilla extract, and ground ginger to a stand mixer and beat until light and fluffy, about 1 minute.
  2. Add in the powdered sugar one cup at a time on the lowest speed setting until smooth and fluffy, about 2 minutes.
  3. Add frosting to the piping bag and frost your cupcakes.
