Ingredients
- 1 egg
- 1/3 cup melted coconut oil
- 1/2 cup pumpkin puree
- 1.5 tsp vanilla extract
- 3/4 cup maple syrup
- 2.25 cups oat flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 2 tsp pumpkin pie spice
- 3/4 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350F and line a 9x13 baking pan with parchment paper or spray with oil
- In a large mixing bowl whisk together egg, pumpkin puree, maple syrup, melted coconut oil, and vanilla extract
- In a separate mixing bowl combine oat flour, salt, baking soda, and pumpkin pie spice
- Fold dry ingredients into wet with a spatula
- Fold chocolate chips into the batter
- Spread the batter into the baking pan and top with extra chocolate chips
- Bake at 350F for 25 minutes
- Remove the cookie bars from the oven and allow to cool fully before slicing into 12 squares
- Store bars in an airtight container on the counter for up to 5 days or in the freezer for up to 3 months
