Ingredients

  • 1 1/2 cups butter softened
  • 2 cups brown sugar packed
  • 1 cup sugar
  • 1 (15 ounce) can pumpkin puree
  • 1 egg
  • 1 teaspoon vanilla extract
  • 4 cups all-purpose flour
  • 2 cups quick cooking oats
  • 1 tablespoon cinnamon
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups chocolate chips half semi-sweet/half milk chocolate

Instructions

  1. Preheat oven to 375 degrees F.
  2. In a medium bowl, beat together butter and sugars until creamy. Add pumpkin, egg and vanilla and beat until smooth.
  3. In another bowl, mix together the dry ingredients flour, oats, cinnamon, baking soda, baking powder and salt.
  4. Add dry ingredients to the wet ingredients and stir until combined. Fold in chocolate chips.
  5. Use a cookie scoop to scoop onto a lightly greased cookie sheet.
  6. Bake for 11-15 minutes.
NOTE:
  1. Once out of the oven, round out cookies with back end of spatula and add a few extra chips on top.
