Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 tablespoon pumpkin spice
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter , melted
  • 1 1/2 cups whole milk
  • 1 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons vinegar
  • 3 tablespoons brown sugar , packed

Instructions

  1. Sift the flour, baking powder, pumpkin spice and salt twice into a large bowl.
  2. In a medium bowl whisk together butter, milk, pumpkin puree, egg, vanilla extract, vinegar and brown sugar until smooth.
  3. Add in flour mixture and whisk until just combined.
  4. Let sit for 5 minutes.
  5. Scoop 1/4 cup batter onto lightly buttered griddle on medium heat and cook until bubbles form.
  6. Flip and cook for 20 seconds.
