Pumpkin Protein Balls

These healthy pumpkin protein balls are the perfect no-bake snacks! They only require a handful of ingredients and are so easy to throw together. Ingredients

  • 2 cups rolled oats
  • 5 tablespoons Vanilla Protein
  • ¾ cup almond butter or nut butter of choice
  • ½ cup pumpkin puree
  • ¼ cup maple syrup or honey
  • ⅛ teaspoon cinnamon
  • ¼ teaspoon pumpkin pie spice
  • 2 tablespoons mini chocolate chips
  • 2 tablespoons hemp hearts

Instructions

  1. Add the rolled oats, protein powder, almond butter, pumpkin puree, maple syrup, cinnamon, and pumpkin pie spice to a large bowl.
  2. Mix to combine. Then add the mini chocolate chips and hemp hearts.
  3. Fold the mini chocolate chips and hemp hearts into the mixture.
  4. Using a cookie scoop or a large spoon, scoop out the mixture and roll into balls.
  5. Place the rolled balls into a lined sheet pan and refrigerate for 30 minutes before enjoying or transferring to an airtight container.
