Pumpkin Soup
A delicious pumpkin soup recipe, a favorite of Mma Ramotswe, famous detective from Botswana and main character from Alexander McCall Smith's novels.

Ingredients
- 1 small pumpkin (4-5 lb/2-2,5kg)
- 1 potato
- 1 small sweet potato
- 2 onions , diced
- 3 tablespoons butter
- ½ cup heavy cream
- 4 cups hot water
- 1 cup milk
- 2 cubes vegetable bouillon (or chicken bouillon)
- 2 small green apples , peeled and seeded
- ½ teaspoon ground cumin
- 1 pinch ground chili pepper
- 2 cloves garlic
- 1 tablespoon paprika
- ¼ teaspoon dried sage (or 1 sprig fresh sage)
- ½ teaspoon dried thyme (or 1 teaspoon fresh thyme)
- 1 cinnamon stick (or ¼ teaspoon ground cinnamon)
- salt
- freshly ground pepper
Instructions
- Chop the vegetables coarsely.
- Dissolve bouillon cubes in hot water.
- Melt the butter in a large pot over medium heat and sauté the onions. Add the garlic.
- Stir and cook 3 minutes.
- Add the ground chili pepper, cumin and paprika and stir for one minute.
- Add broth and mix well.
- Add all remaining ingredients. Cover and cook over medium heat for 30 minutes.
- Remove cinnamon stick and mix with hand blender or blender.
