Ingredients

  • ½ cup salted butter room temperature
  • 1 cup white granulated sugar
  • 2 large eggs at room temperature
  • ½ cup milk at room temperature
  • 1 cup pumpkin puree
  • 2 cups white flour
  • 2 tsp baking powder
  • 2 tsp pumpkin spice

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and fill a muffin tin with liners.
  2. Whisk the butter and sugar together in a large mixing bowl until smooth and creamy.
  3. Whisk in the eggs and milk until the mixture is smooth and the egg yolks are fully incorporated.
  4. Gently fold in the pumpkin puree until it is homogenous with the batter.
  5. Whisk in the flour, baking powder, and pumpkin spice until the dry ingredients are fully incorporated into the mix.
  6. Pour the batter into the muffin liners and bake for 15 - 20 minutes or until a toothpick inserted into the center comes out clean. 
  7. Serve and enjoy!
