Purple Wheat Bread, Goat cheese and Truffled honey:

Make the bread and then try it with any kind of cheese, toasted or eaten with butter. it has a lovely nutty flavour. I ate mine with goat cheese and truffle Honey. You could also eat it with Marmalade or a Quince jam or paste would be equally as good.

Ingredients

  • 240 gram purple wheat flour 2 cups
  • 160 gram white or bread flour, 1/1/4 cup
  • 10 gram dried yeast 2 teaspoons
  • 50 gram butter melted
  • 50 gram honey 3 Tablespoons
  • 125 ml water 1/2 cup
  • 250 ml water Extra , to finish
  • 1 teaspoon salt
  • 150 gm walnuts chopped
  • 150 gm apricots chopped
  • 150 gram goat cheese
  • 50 ml honey truffled flavor
  • 50 gm hazelnut roasted

Instructions

  1. Oven Temp: 180 C / 360 F. Loaf tin 23 cm x 9 cm (9 in x 3.5 in)
  2. Combine honey, 125 ml water and sprinkle with yeast. Leave in a warm place till foaming. This will take about 10 minutes
  3. Put the flour, salt, yeast mixture, butter and 3/4 of the remaining water into the bowl of a mixer. Knead on low for at least 10 minutes, or until smooth and shiny and elastic. (The extra water is just in case the mixture looks a little dry. All flour is different. You need to knead the dough till it comes together in a ball though before you even consider adding extra water)
  4. Mix then add nuts and apricot on low. Pour onto a bench with a little flour and just knead together.
  5. The dough needs to be soft and pliable. It will be silky and smooth once done.
  6. Roll into a long sausage. Fold in half and twist before putting into the well greased loaf tin ( You don't have to fold it, it just looks good).
  7. Sit in a warm place till doubled in size.
  8. Bake for 40-50 min in the middle of a hot oven.
  9. Cool. Slice into pieces and toast. Spread with goat cheese and drizzle with Truffle honey.
