Ingredients
- 1 pound ground chorizo sausage
- 1 small yellow onion, diced (about ½ cup)
- 1 small jalapeño pepper, finely diced
- 4 cups (452 g) Monterey Jack cheese, shredded

- cilantro, chopped for garnish
- warm tortillas, or tortilla chips for serving
Instructions
- Preheat oven to 400°F.
- In a large, oven-safe skillet (like cast iron) over medium-high heat, cook the chorizo sausage for 4 minutes, breaking up the meat as you go.
- Add onion and jalapeno. Continue to cook for 4-6 more minutes, or until the chorizo is cooked through. Discard excess grease. Then, reserve about ¼ cup of the cooked chorizo for topping.
- Top the cooked chorizo with cheese. Then, top with reserved chorizo.
- Bake for 10 to 12 minutes, or until the cheese has melted.
- Top with tomatoes, jalapenos, and cilantro. Serve warm with warm tortillas or tortilla chips.
