Quick and Easy Chicken Posole
This Quick and Easy Chicken Posole (or Pozole) with the spicy chicken sausage, salsa and Mexican spices is super flavorful.
Ingredients
- 12 ounces chicken sausage such as Al Fresco, fully cooked, spicy
- 1 teaspoon olive oil
- 1 onion chopped, large
- 1 tablespoon garlic about 3 cloves of garlic, minced
- 2 teaspoons cumin ground
- 1 teaspoon oregano preferably Mexican oregano, but regular will be fine, dried
- 1/2 teaspoon black pepper
- 1 chicken broth 32 ounce carton
- 1/2 green salsa 16-oz jar or 1 cup, or 1 cup Herdez Tomatillo Verde Mexican Cooking Sauce
- 1 green chilis 4 ounce can
- 2 white hominy 15 ounce cans, drained and rinsed
- 1/2 cup cilantro chopped, fresh
Instructions
- Slice the sausage into thin slices.
- Heat a large skillet over medium heat and add the olive oil.
- Place the sausage in a large skillet and cook for about two minutes on each side until browned.
- Add the chopped onions into the skillet and cook about 5 minutes until the onions are soft.
- Add the garlic to the sausage and onions and cook for about 1 minute.
- Add the sausage, onions, garlic and remaining ingredients into a large slow cooker.
- Cook on low for about 8 hours or on high for 4 hours.
- Garnish with fresh cilantro or any of your favorite toppings.
