Quick and Easy Chicken Posole

This Quick and Easy Chicken Posole (or Pozole) with the spicy chicken sausage, salsa and Mexican spices is super flavorful.

Ingredients

  • 12 ounces chicken sausage such as Al Fresco, fully cooked, spicy
  • 1 teaspoon olive oil
  • 1 onion chopped, large
  • 1 tablespoon garlic about 3 cloves of garlic, minced
  • 2 teaspoons cumin ground
  • 1 teaspoon oregano preferably Mexican oregano, but regular will be fine, dried
  • 1/2 teaspoon black pepper
  • 1 chicken broth 32 ounce carton
  • 1/2 green salsa 16-oz jar or 1 cup, or 1 cup Herdez Tomatillo Verde Mexican Cooking Sauce
  • 1 green chilis 4 ounce can
  • 2 white hominy 15 ounce cans, drained and rinsed
  • 1/2 cup cilantro chopped, fresh

Instructions

  1. Slice the sausage into thin slices.
  2. Heat a large skillet over medium heat and add the olive oil.
  3. Place the sausage in a large skillet and cook for about two minutes on each side until browned.
  4. Add the chopped onions into the skillet and cook about 5 minutes until the onions are soft.
  5. Add the garlic to the sausage and onions and cook for about 1 minute.
  6. Add the sausage, onions, garlic and remaining ingredients into a large slow cooker.
  7. Cook on low for about 8 hours or on high for 4 hours.
  8. Garnish with fresh cilantro or any of your favorite toppings.
