Quick and Easy Keto Pizza

Ingredients

  • 1 ½ cups shredded part-skim mozzarella
  • 2 tablespoons cream cheese
  • ⅔ cup coconut or almond flour
  • 2 large eggs beaten
  • ¼ teaspoons salt

  • 1 cup shredded mozzarella
  • 1 ounce pepperoni

Instructions

  1. Preheat oven to 425 degrees Fahrenheit. Line a large baking sheet with parchment paper and spray with cooking spray, or brush with oil.
  2. In a medium bowl add 1 ½ cups shredded part-skim mozzarella and 2 tablespoons cream cheese. Heat in microwave for 60 seconds. Remove and stir. Continue heating in 20-second increments until fully melted and able to be stirred together.
  3. Add in 2 large eggs, ¼ teaspoons salt, and ⅔ cup coconut or almond flour. Stir together until blended.
  4. Place the dough on the prepared baking sheet and press out to be ¼-inch thick.
  5. Bake the pizza crust for 10 minutes. Remove and then add 1 cup shredded mozzarella, and 1 ounce pepperoni. Bake with the toppings for an additional 10 minutes.
