Quick Black Beans

Quick Black Beans are a flavorful dish made by simmering canned black beans with Puerto Rican sofrito, olive oil, tomato paste, and seasonings including Sazon and chicken bouillon. Ingredients

  • 1/4 cup sofrito Puerto Rican style
  • 1 tablespoon olive oil
  • 15 ounce black beans not rinsed or drained, canned
  • 1/2 tablespoon Sazon seasoning (or 1 packet)
  • 1/2 teaspoon chicken bouillon or more to taste (Better Than Boullion
  • 2 tablespoons tomato paste
  • 1/2 cup water
  • white rice optional, cooked, for serving

Instructions

  1. Heat olive oil in a medium skillet and add the sofrito, saute 3 to 4 minutes, stirring. If the sofrito is frozen, cover on low until it melts, then saute.
  2. Add the remaining ingredients and bring to a boil, cover and simmer 15 minutes, until the flavors meld and thicken. Uncover and simmer 5 minutes over medium heat, stirring.
  3. If you want thicker beans, uncover and simmer longer. For soupier beans, add more water.
  4. Taste for salt before serving and adjust as needed.
  5. Serve over white rice, if desired.

Notes

  • Store homemade sofrito in ice cube trays in the freezer for convenient use over months.
  • If fresh sofrito is not available, jarred versions or a small batch can replace it.
