Quick Chicken Tacos

Seasoned chicken breast in a warm tortilla, topped with a tomato mixture and cheese!

Ingredients

  • 2 pounds boneless skinless chicken breasts cubed ½-inch
  • 1 packet taco seasoning or 3 tablespoons homemade taco seasoning
  • 2 tablespoons olive oil
  • 1 lime zested and juiced, divided
  • ½ cup diced fresh tomatoes
  • ½ cup diced onion
  • ¼ cup chopped fresh cilantro
  • salt to taste
  • 12 (6-inch each) flour tortillas warmed
  • 2 ounces cotija cheese crumbled, more to taste

Instructions

  1. In a medium-sized mixing bowl evenly coat cubed raw chicken with taco seasoning.
  2. In a 12-inch skillet set over medium-high heat add 2 tablespoons of olive oil and cook chicken, in batches, until browned and fully cooked on the inside.
  3. Add all of the browned chicken to the pan and add in the juice and zest of ½ lime. Then remove the chicken from the heat and cover with a lid to keep warm.
  4. In a small mixing bowl add tomatoes, onion, cilantro, and the juice and zest of ½ lime. Stir to combine and season with kosher salt to taste.
  5. Add an equal amount of chicken to each tortilla and top with an equal amount of the tomato mixture and cheese.
