Quick Homemade Kale Pesto

Ingredients

  • 3 cups chopped kale washed and packed
  • ½ cup pine nuts or walnuts or almonds
  • ⅓ to ½ cup olive oil or as needed
  • 1 clove garlic chopped
  • 2 tablespoons fresh lemon juice
  • 2 ounces Parmesan Cheese
  • kosher salt to taste

Instructions

  1. Place the pine nuts in a shallow frying pan and cook over medium heat stirring or shaking until fragrant and golden, about 4 minutes. Cool.
  2. Combine nuts, garlic, lemon juice, and ¼ teaspoon kosher salt, parmesan cheese in a food processor and process until combined.
  3. Add kale and process until combined. With the processor running, add oil to reach desired consistency. Season with salt to taste.

Notes

  • If you don't have pine nuts, they can easily be swapped for almonds, pecans or other nuts.
  • Kale pesto should keep in the refrigerator for 2-3 days.
