Quick Pickled Asian Vegetables

Ingredients

  • 2 carrots peeled & cut into matchsticks
  • ½ seedless cucumber peeled & cut into matchsticks
  • ¼ red onion thinly sliced
  • ½ Jalapeño sliced into matchsticks
  • 1 clove of garlic thinly sliced
  • ½ cup seasoned rice vinegar
  • ¼ cup of water
  • 1 tsp salt

Instructions

  1. Cut the vegetables then place them into a pint-sized glass jar.
  2. In a glass bowl, heat the seasoned rice vinegar, water, and salt in the microwave for 30 seconds. Allow it to sit for a minute or two then stir until the salt is dissolved.
  3. Pour the liquid over the veggies then allow it to cool. Seal tightly with a lid and place in the refrigerator for at least a few hours before serving. Enjoy.
