Quick Pickled Red Onions

Quick Pickled Red Onions are thinly sliced onions soaked in a tangy brine of apple cider vinegar, hot water, sugar, and kosher salt. After 30 minutes at room temperature, they develop a crisp yet slightly softened texture and bright acidic flavor. They add a refreshing, sharp contrast to sandwiches, tacos, salads, or grilled dishes.

Ingredients

  • 1 red onion large
  • 3/4 cup apple cider vinegar
  • 1/2 cup water hot
  • 1 to 2 tablespoons granulated sugar can use honey or pure maple syrup
  • 1 teaspoon kosher salt

  1. To slice the onion, cut it in half to create half-moons.  Use a very sharp knife or mandoline to create uniform, thin slices. You want the slices to be about 1/8-inch thick.
  2. In a medium jar or bowl, combine the vinegar, warm water, sugar, and salt. Stir until sugar and salt dissolve.
  3. Add the red onion slices and stir, making sure the onion is covered. Let sit for 30 minutes at room temperature.
  4. Serve immediately or store in the refrigerator in a sealed jar or container for up to 3 weeks.

  • Store the pickled red onions in a sealed jar or airtight container in the refrigerator for up to three weeks to keep them fresh and tangy.
  • Use a very sharp knife or a mandoline to achieve thin, uniform 1/8-inch slices for consistent texture and easy pickling.
  • The longer the onions sit in the brine, the more mellow and flavorful they become, but they also retain crunch if not left too long.
