Quinoa and Field Roast Chipotle Sausage

A really quick and easy 30 minute meal that's vegan, nutritious and super delicious =)

Ingredients

  • - 2/3 cup quinoa rinsed and drained
  • - 1 cup vegetable broth
  • - 1/2 cup simple tomato sauce
  • - 2 Field Roast Mexican Chipotle Sausages
  • - salt to taste

Instructions

  1. To make the quinoa, combine the quinoa and vegetable broth in a pot and cover. Cook over medium low heat for about 20 minutes. Do not peek and lift the lid! It lets the steam out, and you need that steam to cook it.
  2. After the 20 minute mark, take a look, and if all the liquid is gone, turn off the element and remove from heat. Fluff with a fork and set aside.
  3. The sausage is already "cooked", so now you're reheating it in the tomato sauce. Over medium low heat, heat up the sausage in the tomato sauce, stirring frequently so that the tomato sauce doesn't burn. Turn over the sausage regularly for even cooking.
  4. Once adequately cooked, cut the sausage into coins and serve over a bed of quinoa.
