Quinoa Cottage Cheese

Ingredients

  • 200 g quinoa
  • 200 g cottage cheese
  • 30 g peanuts
  • 2 tablespoon butter
  • 1 teaspoon salt
  • 1 teaspoon red pepper
  • 1 teaspoon garam masala
  • ½ teaspoon cumin seeds
  • spring onions
  • 1 tablespoon lemon juice

Instructions

Cook quinoa

  1. After thoroughly rinsing the quinoa, cook it in a rice cooker with twice the amount of water and a pinch of salt.
Fry cottage cheese
  1. Melt butter in a frying pan over low heat. Fry the large slices of cottage cheese on all sides until they turn slightly brown. Transfer them to a dish. Once cooled, slice them to your desired sizes.
Combine quinoa and cottage cheese
  1. In the same frying pan, add cumin seeds and sauté until aromatic. Then, fry the peanuts until they turn slightly reddish-brown.
  2. Add the cooked quinoa and stir-fry for a minute. Next, add the fried cottage cheese (paneer), lemon juice, salt, pepper, and garam masala. Mix well and cook for another 2-3 minutes on low heat.
  3. Garnish with spring onions or your favorite herbs. Serve tasty high protein cottage cheese quinoa bowl anytime of the day!
