- 1 cup mixed veggies such as bell peppers, carrots, and cucumber
- 1 egg
- 1 tablespoon oil
- salt and pepper to taste

Cup of Yum
Cook the Veggies and Egg
- Saute the veggies in a small frying pan until tender. (You can also use raw veggies if you prefer). Add the garlic and saute for 30 seconds to 1 minute. Watch it carefully so it doesn’t burn.
- Push the veggies to one side of the hot pan and add the egg. Scramble the egg until cooked and mix with the veggies. If the mixture seems dry, add a teaspoon of butter or oil.
Make Quinoa Fried Rice
- Add a sprinkle of garlic powder or your seasoning of choice to the quinoa. Fluff with a fork and add the quinoa into the pan with the veggies.
- Add the soy sauce and stir well.
- Season with salt and pepper to taste and pan fry for a few minutes. Serve and enjoy!
