Quinoa with Black Beans and Corn

A very nutrient-dense and healthy bowl of quinoa and black beans. Great by itself or as a base for adding other protein on top!

Ingredients

  • 1 teaspoon olive oil
  • 1 onion chopped, large
  • 5 cloves garlic peeled and chopped
  • 3/4 /4 cup quinoa uncooked
  • 1 1/2 /2 cups vegetable broth low sodium
  • 1 teaspoon cumin ground
  • 1/4 /4 teaspoon cayenne pepper
  • salt to taste
  • black pepper to taste
  • 1/2 /2 corn kernel canned
  • 1 black beans 15 ounce can, drained
  • 1/2 /2 cup cilantro chopped, fresh

Instructions

    Cup of Yum
  1. Heat the oil in a pan over medium heat. Add onions until lightly browned, then add the garlic until lightly browned.
  2. Add quinoa, broth, spices, salt and pepper into the pan.
  3. Bring to a boil on high, then simmer on low for 20 minutes.
  4. Add beans and corn to the pan over low heat (if necessary) until heated through. Add cilantro and serve.
