Ingredients
- 4-5 cups cooked quinoa from about 1 ½ cups of uncooked quinoa – can also use cooked rice
For the tomatillo and cilantro sauce:
- 6 tomatillos washed and quartered
- 1 bunch of cilantro washed and large parts of stems removed
- juice from 1 lime
- 2 tbs chopped white onion
- 2 garlic cloves crushed
- 1 hot pepper jalapeño or serrano - optional
- salt and pepper to taste
Instructions
- Combine the tomatillos, cilantro, lime juice, chopped onions, crushed garlic, hot pepper (if using), salt and pepper to taste in a blender, mix until a smooth sauce is obtained.
- Mix the sauce with the cooked quinoa, serve warm. Can also be made ahead and re-heated before serving. You can also serve as a cold side dish.
