Quinoa with tomatillo and cilantro sauce

Ingredients

  • 4-5 cups cooked quinoa from about 1 ½ cups of uncooked quinoa – can also use cooked rice
For the tomatillo and cilantro sauce:
  • 6 tomatillos washed and quartered
  • 1 bunch of cilantro washed and large parts of stems removed
  • juice from 1 lime
  • 2 tbs chopped white onion
  • 2 garlic cloves crushed
  • 1 hot pepper jalapeño or serrano - optional
  • salt and pepper to taste

Instructions

  1. Combine the tomatillos, cilantro, lime juice, chopped onions, crushed garlic, hot pepper (if using), salt and pepper to taste in a blender, mix until a smooth sauce is obtained.
  2. Mix the sauce with the cooked quinoa, serve warm. Can also be made ahead and re-heated before serving. You can also serve as a cold side dish.
