Ingredients

  • 5.3 oz plain Greek yogurt container of
  • 2 tablespoons coleslaw dressing
  • 1 tsp sriracha
  • ½ tsp lemon juice
  • Pinch salt
  • Pinch black pepper
  • 1 cup chicken shredded
  • ¼ cup red onion
  • ½ cup celery
  • ½ cup apple diced
  • ½ cup red pepper
  • ½ cup orange bell pepper
  • ½ cup cucumber
  • 4 pieces romaine lettuce

Instructions

  1. Start off by preparing your ingredients. I cooked chicken breast I already had on hand, but you could also use an already cooked rotisserie chicken. See the notes below for some tips on preparing chicken if needed.
  2. In a mixing bowl, add Greek yogurt, coleslaw dressing, lemon juice, sriracha, and salt + pepper. Whisk it all together.
  3. Next, finely dice all of the fruits and vegetables. I used a mandolin chopper and it was so quick and efficient. I loved how everything came out the same size.
  4. Add diced fruits and veggies to the Greek yogurt mixture. Then, stir in the shredded chicken.
  5. Wash and dry your romaine lettuce leaves. Then, add chicken salad mixture to the center to create lettuce wraps.
  6. Top with salt and pepper and serve. You can also serve on fresh rolls or with crackers.

Notes

  • Store the chicken salad and lettuce leaves separately to avoid sogginess from moisture transfer.
  • Strain excess liquid from the chicken salad before serving to maintain a crisp texture and avoid watery wraps.
  • Using a vegetable mandolin or chopper for uniformly small vegetable and fruit pieces enhances the salad's texture and flavor distribution.
  • Shredded chicken can be prepared fresh, grilled, rotisserie, canned, or pre-shredded for convenience according to your preference.
