Rainbow Pizza

Rainbow French Bread Pizza is the perfect easy pizza recipe using pizza sauce and colorful fresh vegetables. Make this into a St. Patrick's Day pizza or have it any other time of the year!

Ingredients

  • 1 large loaf french bread
  • 1/2 cup Pizza Sauce
  • 1 cup mozzarella cheese , finely shredded
  • 1/4 cup red onion , chopped
  • 3/4 cup broccoli florets
  • 3/4 cup yellow grape tomatoes , quartered
  • 1/2 cup orange bell pepper , chopped
  • 1/2 cup red bell pepper , chopped

Instructions

  1. Preheat oven to high broil.
  2. Cut French bread in half lengthwise and then half down the middle, creating quarters.
  3. Place cut side up on a baking sheet and place under the broiler for 2-3 minutes, or until lightly browned.
  4. Divide pizza sauce on each French bread pizza. Do the same with finely shredded mozzarella cheese.
  5. Follow the colors of the rainbow and arrange your red onion, broccoli, tomatoes, and bell peppers in the order of the rainbow. Remember ROY-G-BIV!
  6. Reduce oven temperature to 350 and bake for approximately 15 minutes. Cheese should be melted and veggies starting to soften, but not limp.
  7. Remove and eat immediately!
