Rainbow Salad
A light and colorful rainbow salad with purple cabbage, cucumbers, peppers, tomatoes, mushrooms, olive oil and lemon. Easy, flavorful, vegan.
Ingredients
- 1/2 red cabbage shredded in small pieces, small
- 3 tomato diced, small, ripe
- 1 whole bell pepper seeded and diced, yellow
- 1 pound cucumber diced small with skin on, Persian
- 4 ounces white button mushroom sliced, small
- 3/4 cup kalamata olives pitted
- 3 tablespoons lemon juice fresh
- 2 tablespoons extra virgin olive oil
- 1/4 teaspoon sea salt or more to taste
Instructions
- Combine all vegetables in a large mixing bowl and mix well.In a small mixing bowl, combine lemon juice, olive oil and salt. Pour over the chopped vegetables and toss to coat. Serve.
