Rainbow Vegetable Sandwich

Ingredients

  • 2 lices bread
  • 2 tablespoons cream cheese Arla Herbs & Spices brand
  • 1/4 cup arugula
  • 6 cucumber slices
  • 1/4 cup alfalfa sprouts
  • 1/2 avocado pit removed and sliced
  • 5 yellow bell pepper strips
  • 3 tablespoons  carrot shredded
  • 5 red bell pepper cut into strips
  • 2 to tomato slices
  • 2 radish sliced
  • 3 tablespoons purple cabbage finely chopped

Instructions

  1. Spread the cream cheese on each slice of bread. Take one slice of the bread and layer the veggies, starting with the arugula and ending with the purple cabbage. Place the other piece of bread on top, cream cheese side down, and gently press the sandwich together. It will be a mighty sandwich. Grab a napkin and enjoy immediately.
