Ingredients

  • 1 1/2 cups wheat bran
  • 1 cup buttermilk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 2/3 cup brown sugar , packed
  • 1/2 teaspoon vanilla extract
  • 1/2 cup raisins
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat oven to 375 degrees and line a muffin tin with muffin liners.
  2. Add wheat bran and buttermilk to a large bowl and mix well.
  3. Let sit for 10 minutes.
  4. Add oil, egg, brown sugar, vanilla extract and raisins and whisk well.
  5. Sift together flour, baking soda, baking powder, salt and cinnamon.
  6. Add to wet ingredients and stir until just combined.
  7. Scoop into muffin liners and bake for 18-20 minutes.
